Gain Muscle Lose Fat
How many calories should I eat each day to Lose Fat and gain muscle?

I'm 30 and weighs 273 pounds. I'm 6'2 ", so it really does not look like I weigh 273 (most people think they weigh about 250). Anyway, how many calories should I eat to day to gain muscle and lose fat? Should my diet completely balanced or should be filled with carbohydrates or proteins? HELP!
